Banana Bread (Egg-free)

I have had numerous people tell me this is the best banana bread ever.  My
coworkers literally fight to get a piece of it!  And when my hubby and my daughter find out I made some to bring to work, they beg me not to take it!  Enjoy!
Banana Bread

1/2 c. margarine
1 c. sugar
2 t. baking powder
2 T. vinegar
2 T. water
1 t. baking soda
pinch of salt
1/4-1/2 c. chopped nuts (optional)
1-1/2 c. flour
3 crushed, ripe bananas

Cream margarine, eggs, baking powder, vinegar, and water.  Add dry ingredients and mix well.  Add bananas and nuts.  (I leave out the nuts.)  Pour into greased and floured loaf pan.  Bake at 350 degrees for 50-55 minutes.
For banana muffins, bake 20 minutes, then check to see if they are done.
