Crock Pot Herbed Roast with Gravy

  • Chuck roast

  • salt and pepper

  • diced onion

  • Campbell’s Fiesta Cheese Soup

  • 8 oz. tomato sauce

  • 8 oz. mushroom pieces and stems, drained

  • 1/4 t. basil

  • 1/4 t. oregano

  • 1/2 c. water

Cut roast into smaller pieces.  Season with salt and pepper.  Place in crock pot.  Top with onions.

Combine soup, mushrooms, water, and spices.  Pour over meat.

Cover and cook on low heat for 8-10 hours.  High heat for 4-5 hours.

 

Banana Bread (Egg-free)

I have had numerous people tell me this is the best banana bread ever.  My
coworkers literally fight to get a piece of it!  And when my hubby and my daughter find out I made some to bring to work, they beg me not to take it!  Enjoy!
Banana Bread

1/2 c. margarine
1 c. sugar
2 t. baking powder
2 T. vinegar
2 T. water
1 t. baking soda
pinch of salt
1/4-1/2 c. chopped nuts (optional)
1-1/2 c. flour
3 crushed, ripe bananas

Cream margarine, eggs, baking powder, vinegar, and water.  Add dry ingredients and mix well.  Add bananas and nuts.  (I leave out the nuts.)  Pour into greased and floured loaf pan.  Bake at 350 degrees for 50-55 minutes.
For banana muffins, bake 20 minutes, then check to see if they are done.

Pizza Spice and Pizza Dough Recipe

Pizza Spice

3 T. basil
2 T. oregano
1-1/2 T. garlic salt
1 T. onion powder
1 T. cilantro
2 t. salt
1 t. pepper

Store in a glass jar.  (I keep mine in an empty chicken bouillon cubes jar.)

To use:  2 T. spice mix added to 8 oz. tomato sauce.

Pizza Dough Recipe for Bread Machine

1 c. water
1 T. oil
1 T. sugar
1/2 t. salt
1 T. dry milk
2 heaping t. pizza spice mix
1-1/4 c. white flour
1 c. wheat flour
1 t. yeast

Add all to bread machine and place on pizza dough cycle.
When the cycle is finished, let it set for 90 minutes.
Spread in pizza pan.  Top with pizza fixings.
Bake 450 degrees for at least 15 minutes.

Crock Pot — Helpful Tip

As I was browsing through my crock pot recipe book this morning, I discovered a very helpful tip.

Put all ingredients together the night before you need them, and put them in the refrigerator.  The next morning, you can just throw them all in the pot very quickly.

How easy is that?  And I never thought of doing it that way before!

Ingredients

  • 1 pound ground beef
  • 1 (15 ounce) can sweet corn, drained
  • 1 cup mild, chunky salsa
  • 1/4 cup sliced black olives
  • 3 1/2 cups cooked egg noodles
  • 1 (15.25 ounce) can kidney beans, drained and rinsed
  • 1 (1.25 ounce) package taco seasoning mix
  • 1/2 cup tomato sauce
  • 8 oz. shredded taco cheese

Directions

  1. Preheat oven to 350 degrees.
  2. In a skillet over medium heat, cook the ground beef until evenly brown; drain.
  3. In a 9×13 inch greased baking dish combine the beef, corn, salsa, olives, cooked noodles, beans, seasoning mix, and tomato sauce.
  4. Top with shredded taco cheese.
  5. Bake in the preheated oven for 1/2 hour, or until cooked through.

Hamburger Casserole

1 lb. ground beef
8 oz. cream cheese
cream soup
1/4 c. ketchup
1/2 c. milk
12 oz. refrigerated biscuits
**

Brown meat.  Drain.  Combine cream cheese, soup, ketchup, and milk.  Mix well.  Add meat.  Pour into 2 qt. greased casserole dish.  Bake at 350 for 15 minutes.  Add biscuits.  Bake for 15 minutes.

** I also added a can of black beans to mine.  You could even try adding pinto beans.

White Chicken Enchiladas

White Chicken Enchiladas

8 flour tortillas
2 c. cooked, diced chicken
2 c. shredded Monterey jack cheese
3 T. margarine
3 T. flour
2 c. chicken broth
1 c. sour cream
small can diced green chilies

Grease 9×13 pan.  Mix chicken and 1 c. cheese.  Roll into tortillas.  Lay in pan, seam side down.  In sauce pan, melt margarine.  Add flour, then slowly add chicken broth and whisk until thickened.  Remove.  Add sour cream and green chilies.  Pour over enchiladas.  Top with remaining cheese.  Bake 20-25 minutes.

For even more flavor, you could add a jar of salsa or taco sauce.
