Instant Cream Soup Recipe

Instant Cream Soup

2 c. dry, instant milk
3/4 c. cornstarch
1/4 c. instant chicken bouillon
1 t. onion powder
1/2 t. thyme
1/2 t. dried basil
1/4 t. pepper

Combine and store in an airtight container. To use for soup, combine 1/3 c. of the mix and 1-1/2 c. water. Bring to a boil while stirring often. Add a veggie for more flavor, such as diced celery or some sliced mushrooms or diced broccoli. To use for a recipe which calls for a can of soup, use 1/3 c. of the mix and 1-1/4 c. water.

I use this recipe for any soups, casserole dishes, etc. that call for any type of cream soup. It saves me a fortune at the store because one single can of cream of mushroom soup can run nearly a dollar or more. And it doesn’t take any longer to make it this way than it does if you use a can from the store.

One thing I have implemented to help with our grocery budget is to implement a soup night during the colder months of the year. I have enjoyed this tip so much, that I have even started using some of the soups during the summer months. For those months, it is usually something like a taco soup recipe that can be used with tortilla chips so that it doesn’t seem so much like “soup.”

Here is one that we will actually use year-round:

Chili Taco Soup (crock pot)

2# ground beef, fried and drained
2 cans stewed tomatoes
1 envelope dry taco mix
2 cans pinto beans
1 can corn
3/4 c. water

Combine all in crock pot. Low heat 5-7 hours.

Wendy’s Chili (crock pot)
2# ground beef, fried and drained
2 cans French onion soup
3 t. cumin
2 T. chili powder
2 cans kidney beans
2 cans tomato paste (12 oz. total)
16 oz. tomato sauce
1/8 t. pepper

Fry meat, drain. Put French onion soup in blender and puree. Pour over meat. Put in crock pot. Add other ingredients. Stir. Low heat 4-5 hours.

Santa Fe Soup (crock pot)

1# Velveeta, cubed
1# ground beef, fried and drained
corn, undrained
14 oz. diced tomatoes with green chilies
stewed tomatoes
one envelope dry taco mix
tortilla chips

Combine all ingredients except for chips in a crock pot. High heat 3 hours.

New Mexico Chili
1/2 lb. pork sausage, fried and drained
1 t. onion flakes
1 t. garlic powder
1 can tomatoes
1 can pork n beans
1 can black beans OR pinto beans, drained
1 can kidney beans, drained

After sausage is fried and drained, add spices, tomatoes, and beans. Simmer, covered, for 15 minutes.

Comfy Chicken Soup (My favorite soup)

8 c. water
8 chicken bouillon cubes
6.4 c. wide egg noodles
2 cans cream of chicken soup
3 c. cooked, diced chicken
1 c. sour cream
1 T. parsley flakes

Bring water to a boil. Add bouillon cubes. Add noodles and cook until done. (About 20 minutes.) Add cream soup and chicken. Heat 10 minutes. Add sour cream and cook until heated through. Add parsley. Stir. Serve.

White Chili (crock pot)

3 cans great northern beans, undrained
medium jar picante sauce
2 c. cooked, diced chicken, shredded
Monterey jack cheese, cubed

Put first 3 ingredients in crock pot. Cook on low for 4-5 hours. Add cheese 30 minutes before serving.

Stacy’s Cheesy Black Bean Soup

1 can chicken broth
2 cans cream of chicken soup
1 can cream corn
1 can black beans, rinsed and drained
1/2# cooked, deboned, shredded chicken
12 oz. cheddar cheese

Mix in soup pot. Heat. Add cheddar cheese at the end and heat until melted.

Patsy’s Nacho Cheese Soup

2 cans nacho cheese sauce
1 can chicken broth
Zatarain’s rice (your choice which flavor)
1# cooked, diced chicken

Fix rice according to package directions. Slowly heat cheese sauce and broth in large pot. Stir often. Once rice and chicken are done, combine with the cheese mixture.

**** MORE FRUGAL TIPS ****
I use ground turkey instead of ground beef because it is MUCH cheaper on the budget.
I make my own cream soup instead of buying the canned stuff from the store.
I make my own taco mix rather than buying the packages at the store.

Cheesy Potato Soup Recipe

This is a recipe I put together myself this evening. It was VERY good!!

Stacy’s Cheesy Potato Soup

2 cans diced potatoes with water (you can use regular potatoes, but I went the easy way)
1/4 block of Velveeta cheese (or generic)
1/4 block of White Cheddar cheese (generic)
diced onion
1 t. parsley
1 t. thyme
1/8 t. pepper
bacon bits (or cooked bacon, diced)

Pour potatoes (undrained) in pot. Add seasonings and cook on low while you diced the cheeses. Add cheeses and melt. Add bacon bits. Heat until warm.
