Chicken Casserole – Quick and Easy

When I was growing up, my mom would make a chicken casserole, similar to what is in the above photo.  I figured out an easier way to make it, and it takes less than 20 minutes!

Chicken Casserole and Biscuits

Start cooking a bag of mixed veggies in a sauce pan.

Next, put a package of biscuits in the oven, and bake according to package directions.

While they are baking, cook a double batch of  cream soup mix in a large soup pot.  When it starts to thicken, add pre-cooked, diced chicken.  

Once the veggies are cooked, drain them and to the large pot.

When biscuits are done, put one in a bowl, and top with the casserole mixture.

Crock Pot Chicken Salsa

I love super easy meals!  This one is delicious!

Crock Pot Chicken Salsa

1 bag of cooked, boneless, skinless chicken tenders — diced

2 jars of salsa

Toss all of it in the crock pot and mix well.  Cook on low for 4-6 hours.

Add your favorites toppings to make chicken tacos or taco salad.

Mexican Casserole

Ingredients

  • 1 pound ground beef
  • 1 (15 ounce) can sweet corn, drained
  • 1 cup mild, chunky salsa
  • 1/4 cup sliced black olives
  • 3 1/2 cups cooked egg noodles
  • 1 (15.25 ounce) can kidney beans, drained and rinsed
  • 1 (1.25 ounce) package taco seasoning mix
  • 1/2 cup tomato sauce
  • 8 oz. shredded taco cheese

Directions

  1. Preheat oven to 350 degrees.
  2. In a skillet over medium heat, cook the ground beef until evenly brown; drain.
  3. In a 9×13 inch greased baking dish combine the beef, corn, salsa, olives, cooked noodles, beans, seasoning mix, and tomato sauce.
  4. Top with shredded taco cheese.
  5. Bake in the preheated oven for 1/2 hour, or until cooked through.

Hamburger Casserole

1 lb. ground beef
8 oz. cream cheese
cream soup
1/4 c. ketchup
1/2 c. milk
12 oz. refrigerated biscuits
**

Brown meat.  Drain.  Combine cream cheese, soup, ketchup, and milk.  Mix well.  Add meat.  Pour into 2 qt. greased casserole dish.  Bake at 350 for 15 minutes.  Add biscuits.  Bake for 15 minutes.

** I also added a can of black beans to mine.  You could even try adding pinto beans.

Chicken Pot Pie

can of potatoes, drained and cut into smaller pieces
bag of frozen veggies, cooked and drained
cream of chicken soup
canned chicken, drained
pepper
poultry seasoning
2 pie crusts

Combine the first 6 ingredients.  Pour into pie shell.  Top with second pie crust.  Cut slits in the crusts. 

Bake for 50 minutes at 350 degrees.
